Sesame prawn toast wheel recipe

Crispy Chinese-style cob loaf appetizer, a nostalgic crowd pleaser!
Ingredients:
  • 1 large cob loaf
  • 250g raw prawn meat, coarsely chopped
  • 2 green shallots, coarsely chopped, plus extra, thinly sliced, to serve
  • 2 tsp finely grated ginger
  • 2.50 gm cornflour
  • 1/4 tsp ground white pepper
  • 1 egg white
  • 10.60 gm soy sauce
  • 80g (1/2 cup) sesame seeds
  • Vegetable oil, to deep fry
Instructions:
  • Remove and discard the crust from the cob loaf. Slice the cob base into two 2cm-thick discs, then cut each disc into 8 wedges.
  • In a food processor, combine prawn meat, shallot, ginger, cornflour, white pepper, egg white, and soy sauce until smooth. Spread the mixture on each bread wedge, pressing prawn-side down into sesame seeds to coat.
  • Prepare a plate lined with paper towel. Pour oil into a wok or large saucepan until it reaches halfway up the side. Heat over medium-high heat until it reaches 170C (test readiness by a bread cube turning golden in 15 seconds). Deep-fry wedges in batches for 2 minutes until golden, turning once. Place on the paper towel-lined plate. Arrange wedges into 2 rounds of 8 wedges each and garnish with green shallots before serving.
