Prawns and Vegetables Over Pan-Fried Udon Noodles

Whip up a speedy udon noodle stir-fry with shrimp, bell peppers, and celery in a delicious sauce.
Ingredients:
  • 0.5 cup soy sauce
  • 0.5 cup water
  • 0.33333334326744 cup brown sugar
  • 0.5 tablespoon ground ginger
  • 1.5 cups water, divided
  • 4 stalks celery, halved lengthwise and cut into 2-inch sticks
  • 0.5 red bell pepper, sliced into thin strips
  • 0.5 yellow bell pepper, sliced into thin strips
  • 10 prawns, peeled, or more to taste
  • 1.5 tablespoons lemon juice
  • 2 (7 ounce) packages fresh udon noodles
Instructions:
  • In a small saucepan over low heat, marry soy sauce, water, brown sugar, and ginger together. Allow the tantalizing mixture to gently simmer, occasionally giving it a loving stir, until you're ready to indulge in its savory goodness.
  • Combine 1/2 cup water, celery, and bell peppers in a small saucepan over medium heat. Cover and cook undisturbed for about 10 minutes. Drain and keep covered while the sauce simmers.
  • In a large saucepan over medium heat, cook udon noodles with 1 cup water for 4 to 5 minutes. Drain noodles and return to the saucepan. Stir in 1/3 of the sauce and cook until heated through, about 3 to 4 minutes. Push noodles to the side of the pan and add prawns. Cook until prawns are opaque throughout, about 3 to 5 minutes.
  • Divide the noodles between 2 bowls evenly. In the saucepan, sprinkle prawns with lemon juice and stir to coat. Layer vegetables on top of noodles, followed by prawns. Drizzle desired amount of remaining sauce over the top.
