Herb-seasoned eye of round steak with caramelized onions in a Burgundy wine sauce.
Ingredients:
  • 2 tablespoons vegetable oil
  • 2 large onions, sliced
  • 12 (4 ounce) beef eye of round steaks
  • 1 teaspoon seasoned salt
  • 0.25 teaspoon dried thyme
  • 0.25 cup all-purpose flour for coating
  • 1 cup Burgundy wine
  • 1 cup beef consomme
  • 1 teaspoon chopped fresh parsley
Instructions:
  • In a large skillet over medium-high heat, sauté onions in oil until lightly browned and tender, approximately 5 minutes. Remove onions from skillet using a slotted spoon and place them in a bowl.
  • Season steaks generously with seasoned salt and thyme, then coat lightly with flour. Cook steaks in a skillet over medium-high heat until golden brown on each side, approximately 5 minutes per side.
  • Add the red wine and beef consommé into the skillet with the steaks, then return the onions to the skillet. Cook until the wine aroma evaporates, about 2 to 3 minutes.
  • Lower the heat to a gentle simmer, cover the pot, and cook for 1 hour. Serve the steaks with the sauce and sprinkle with chopped parsley for a delightful finish.
