Award-winning Thyme Chicken & Dumplings recipe by Heidi Russell – a Bisquick Family Favorites Recipe Contest winner.
Ingredients:
  • 2/3 cup all-purpose flour
  • 1 teaspoon salt
  • 3 teaspoons chopped fresh or 1 teaspoon dried thyme leaves
  • 8 bone-in chicken thighs, skin removed
  • 3 tablespoons olive oil
  • 1 large onion, sliced (1 1/2 cups)
  • 3 cups chicken broth
  • 2 cups sliced celery
  • 2 cups sliced carrots
  • 1/4 teaspoon black pepper
  • 2 cups Original Bisquick™ mix
  • 2/3 cup milk
Instructions:
  • Combine flour, salt, and 1 teaspoon of fresh thyme (or 1/3 teaspoon dried) in a large resealable plastic bag. Add chicken pieces, a few at a time, and shake well to coat evenly. Heat 2 tablespoons of oil in a 5-quart Dutch oven over medium-high heat. Cook 4 chicken pieces for 5 to 7 minutes, flipping once, until golden brown. Transfer chicken to a plate and repeat with remaining pieces.
  • Coat onion with remaining flour in the bag by shaking it well. In a Dutch oven over medium heat, add the remaining 1 tablespoon of oil and cook the onion until light golden brown for about 6 to 7 minutes. Return the chicken to the Dutch oven. Sprinkle with 1 teaspoon of fresh thyme (or 1/3 teaspoon of dried thyme). Pour in the chicken broth, bring to a boil, then cover and simmer over low heat for 45 minutes.
  • Place celery, carrots, and pepper in a Dutch oven. In a medium bowl, mix Bisquick mix, milk, and remaining 1 teaspoon fresh thyme (or 1/3 teaspoon dried) until a soft dough forms. Spoon the mixture by tablespoonfuls onto the chicken. Cook uncovered for 10 minutes. Then, cover and cook for an additional 10 minutes.
