Delightful cupcakes with fruit icing for a gourmet touch.
Ingredients:
  • 750.00 gm self-raising flour, sifted
  • 430.00 gm caster sugar
  • 375g butter, melted, cooled
  • 515.00 gm milk
  • 5 eggs, lightly beaten
  • 8.80 gm vanilla extract
  • 2 x 500g packets pure icing sugar
  • red food colouring
  • 2 passionfruit, pulp removed
  • 1 orange, rind finely grated, juiced
  • sugar flowers to decorate
Instructions:
  • Preheat your oven to 190°C. Place paper cases in two 12-hole muffin pans with 1/3-cup capacity each.
  • In a large bowl, mix together the flour and sugar, creating a well in the center.
  • Whisk together butter, milk, egg, and vanilla in a jug. Pour into the center of the dry ingredients. Gently mix with a metal spoon until just combined. Fill paper cases two-thirds full with the batter. Bake for 12-15 minutes, switching trays halfway through, until a skewer comes out clean. Cool on a wire rack. Repeat with remaining batter to yield 40 cupcakes.
  • Prepare pink icing - Start by sifting 1 1/2 cups of icing sugar into a bowl. Next, add 2 tablespoons of warm water and a drop of red food coloring. Mix thoroughly, then generously spread onto 14 cupcakes. Garnish with edible flowers and allow the icing to set.
  • Prepare the passionfruit icing by sifting 1 1/2 cups of icing sugar into a bowl. Stir in 1 1/2 tablespoons of passionfruit pulp until well combined. Spread the icing onto half of the remaining cupcakes, then decorate with flowers. Let the icing set before serving.
  • Prepare orange icing by sifting 1 1/2 cups of icing sugar into a bowl. Stir in orange rind and 2 tablespoons of orange juice until well combined. Spread onto the remaining cupcakes, top with flowers, and let it set.
