Homemade pretzel dogs: soft dough wrapped around hot dogs, sprinkled with salt, and baked to golden perfection for a mall-like treat at home!
Ingredients:
  • 2 (.25 ounce) packages active dry yeast
  • 2.5 teaspoons white sugar
  • 2 cups warm water
  • 2 cups warm milk
  • 0.5 cup vegetable oil
  • 1.5 teaspoons salt
  • 10 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 (16 ounce) packages hot dogs
  • 0.25 cup coarse kosher salt, or to taste
Instructions:
  • Combine the yeast and sugar with 2 cups of warm water in a small bowl, ensuring the water is no more than 100 degrees F (40 degrees C). Allow it to sit for 20 minutes until the yeast softens and a creamy foam starts to form.
  • Mix the yeast mixture with the warm milk, oil, and salt in a large mixing bowl until well combined. Add half of the flour mixture and stir until no dry spots remain. Gradually mix in the remaining flour, 1 cup at a time, making sure to mix well after each addition. The dough should be moderately stiff and slightly sticky. Transfer the dough onto a lightly floured surface and knead for about 8 minutes, until smooth and elastic.
  • Grease a large bowl, add the dough, and swirl it around to coat evenly. Cover with plastic wrap or a kitchen towel and let it rise in a warm spot (80 to 95 degrees F (27 to 35 degrees C)) until it doubles in size, approximately 45 minutes.
  • Once the dough has doubled in size, prepare a large pot with 8 cups of water, 1 1/2 teaspoons of salt, and baking soda. Bring to a vigorous boil. Meanwhile, portion the dough into 20 pieces equal to a golf ball in size. Roll each piece into a 12-inch rope that is 1 1/2 inches thick.
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease 2 baking sheets.
  • 1. Submerge a strip of dough in boiling water briefly, then transfer it to a paper towel. Wrap it around a hot dog, sprinkle with coarse salt, and place on a baking sheet. Repeat with the remaining dough strips and hot dogs.
  • Bake until golden brown in a preheated oven for 15-20 minutes.
