Indulge in a savory veggie-topped cheesy pie made with Original Bisquick® mix for a delicious Italian-inspired meal.
Ingredients:
  • 2 1/2 cups Original Bisquick™ mix
  • 6 tablespoons cold butter
  • 1/4 cup boiling water
  • 1 cup grated Parmesan cheese
  • 8 oz asparagus, trimmed, cut into 1 1/2-inch pieces
  • 3/4 cup chopped roasted red bell peppers (from 7.25-oz jar)
  • 2 teaspoons chopped fresh oregano leaves
  • 1 tablespoon vegetable oil
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 cup half-and-half
  • 1/2 teaspoon freshly ground pepper
  • 4 eggs
  • 2 tablespoons bread crumbs
Instructions:
  • Preheat the oven to 350°F and grease a 9 1/2-inch glass deep-dish pie plate. In a medium bowl, combine Bisquick mix and cut in butter until crumbly. Stir in boiling water until a soft dough forms. Press dough into the pie plate, forming a crust. Sprinkle 1/2 cup of cheese over the crust. Layer asparagus, roasted peppers, and oregano on top. In a skillet, heat oil and quickly sauté zucchini and yellow squash until just tender. Layer the squash mixture over the ingredients in the pie plate, overlapping slightly.
  • In a medium bowl, whisk together half-and-half, salt, pepper, and eggs until well combined. Pour the mixture over the vegetables, then sprinkle with the remaining 1/2 cup of cheese and bread crumbs. Bake for 45 to 50 minutes or until a knife inserted in the center comes out clean. Allow it to stand for 15 minutes before serving.
