Spicy rhubarb chutney with dried cranberries and fresh ginger - perfect for pork, ham, or sandwiches.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 dash salt
  • 1 pound rhubarb, trimmed and cut into 1/2-inch pieces
  • 0.5 cup sweetened dried cranberries (such as Craisins®)
  • 0.5 cup packed light brown sugar
  • 1 tablespoon red wine vinegar
  • 1 tablespoon minced fresh ginger root
  • 1 cinnamon stick
Instructions:
  • In a saucepan over medium heat, sauté the onion in olive oil until softened, for about 5 to 6 minutes. Season with salt.
  • Combine rhubarb, dried cranberries, brown sugar, vinegar, ginger, and cinnamon stick in a saucepan. Cook until the rhubarb softens and starts to break down, about 6 to 8 minutes. Remove and discard the cinnamon stick before serving.
