Make quick and easy pita bread pizzas for a delicious dinner.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 300g butternut pumpkin, peeled, seeded, thinly sliced
  • 4 small round pita bread
  • 125ml passata
  • 155g mozzarella
  • 100g baby spinach leaves
  • 8 slices prosciutto, halved lengthways
  • 50g goat's cheese, crumbled
  • Fresh rosemary sprigs
Instructions:
  • Preheat your oven to 220°C. Heat oil in a large frying pan over high heat. Cook half of the pumpkin, turning occasionally, for 2 minutes until golden brown and almost tender. Transfer to a plate and repeat with the remaining pumpkin.
  • Spread passata on pita bread on a large oven tray, sprinkle with mozzarella, layer spinach and pumpkin, roll prosciutto and place on top, sprinkle with goat's cheese and rosemary.
  • Place in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and the pizzas are golden brown. Serve promptly alongside additional spinach leaves, if preferred.
