Prosciutto chicken with sweet potato mash

Ingredients:
  • 4 thin slices prosciutto
  • 4 (about 200g each) single chicken breast fillets
  • 2 large (about 800g) orange sweet potatoes (kumara), peeled, coarsely chopped
  • 125ml (1/2 cup) milk
  • Salt
  • 1 quantity mushroom sauce, to serve
  • Fresh continental parsley, chopped, to serve
Instructions:
  • First, preheat your oven to 190°C. Next, elegantly wrap a slice of prosciutto around each succulent chicken breast fillet. Then, place them on a baking tray and bake in the preheated oven for 15 minutes or until perfectly cooked through.
  • Steam the sweet potato until tender, which should take about 10 minutes. Transfer to a large bowl and mix in the milk. Mash until smooth using a potato masher or fork, then season with salt to taste.
  • Plate the mashed potatoes, top with prosciutto-wrapped chicken, drizzle with mushroom sauce, garnish with chopped parsley, and serve promptly.
