Wrap prosciutto around green beans for a tasty upgrade.
Ingredients:
  • 16 prosciutto slices, cut into thirds lengthways
  • 48 (about 270g) green beans, topped
  • 18.20 gm extra virgin olive oil
  • 100g semi-dried tomatoes, coarsely chopped
  • 45g (1/4 cup) Dry Roasted Hazelnuts, coarsely chopped
  • 20.00 ml finely grated lemon rind
  • 42.00 gm fresh lemon juice
  • 36.40 gm extra virgin olive oil
Instructions:
  • In a medium bowl, mix together tomatoes, hazelnuts, lemon zest, lemon juice, and oil to create the flavorful hazelnut salsa.
  • Individually swaddle each bean with a decadent slice of prosciutto.
  • Begin by warming the oil in a spacious frying pan over medium heat. Introduce half of the beans and sauté, turning occasionally, for 4-5 minutes until they turn a vibrant green and reach a tender crispness. Transfer to a serving platter. Proceed with the remaining beans, ensuring the pan is reheated between batches.
  • Serve by generously drizzling the hazelnut salsa over the beans.
