Prosciutto-wrapped stuffing log

Christmas herb stuffing wrapped in crispy prosciutto.
Ingredients:
  • 80g butter
  • 1 large brown onion, finely chopped
  • 175g shortcut bacon rashers, trimmed, finely chopped
  • 1125.00 ml fresh breadcrumbs
  • 40.00 ml finely chopped fresh sage leaves
  • 40.00 ml fresh thyme leaves
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
  • 2 tsp finely grated lemon rind
  • 62.50 ml currants
  • 82.50 ml pecan pieces
  • 1 egg, lightly beaten
  • 4 thin slices prosciutto
Instructions:
  • Preheat your oven to 180C (160C fan-forced).
  • Heat butter in a skillet over medium heat. Add onion and bacon, and stir occasionally for 10 minutes until the onions are soft.
  • Place the mixture into a heatproof bowl and let it cool for 5 minutes. Then, incorporate breadcrumbs, sage, thyme, parsley, lemon rind, currants, pecans, and egg.
  • Firmly shape 4 cups of stuffing into a 25cm-long log. Lay 4 thin slices of prosciutto slightly overlapping on plastic wrap. Place stuffing log at one end, roll up, and remove plastic wrap. Transfer to a greased baking tray. Bake until golden and firm, about 30-35 minutes. Let it rest for 5 minutes, then slice and serve.
