Prosciutto-wrapped chicken cooked in sparkling wine

Create a mouthwatering dish by stuffing chicken with pesto, then baking in honey mustard sauce for an effortless and flavorful dinner.
Ingredients:
  • Mashed potato, to serve
  • 4 single chicken breast fillets
  • 80g (1/3 cup) basil pesto
  • 4 slices prosciutto
  • 400ml sparkling wine
  • 165g pkt Wholegrain Mustard & Honey Sauce
  • Steamed green round beans, to serve
Instructions:
  • Preheat the oven to 180°C. Place 1 piece of chicken between plastic wrap and gently pound to 1cm thickness. Repeat with remaining chicken. Spread pesto on each piece, then roll up and wrap with prosciutto. Place seam-side down in a baking dish. Chill in the fridge for 30 minutes before baking.
  • Drizzle the sparkling wine over the chicken, then bake in the oven for 30 minutes or until the chicken is fully cooked.
  • Heat the sauce according to the packet instructions.
  • Slice the chicken into thick pieces. Divide the mashed potatoes and green beans among serving plates. Arrange the sliced chicken on top and drizzle with the sauce. Season with black pepper before serving.
