Protein-packed veg and cottage cheese slice that can be served hot or cold. Perfect for dinner or packed lunches. Customizable with various vegetables. Great source of plant-based protein for a healthy meal option.
Ingredients:
  • 250g broccoli, cut into florets
  • 2 small zucchini, grated
  • 4.60 gm extra virgin olive oil
  • 1 large carrot, peeled, grated
  • 75g (1/2 cup) frozen corn, thawed
  • 75g (1/2 cup) frozen peas, thawed
  • 6 eggs
  • 250g (1 cup) cottage cheese
  • 40.00 ml wholemeal plain flour
  • 25g (1/3 cup) finely grated vintage cheddar
Instructions:
  • Preheat your oven to 190°C (170°C fan forced). Grease the base and two sides of a 19cm square baking pan. Line the pan with baking paper, leaving an overhang on two sides for easy removal of the slice after baking.
  • Steam broccoli over gently simmering water for 2-3 minutes until perfectly tender, then quickly cool under running water and drain. Give the broccoli a coarse chop.
  • After draining the zucchini in a colander, gently squeeze out any extra liquid. Heat oil in a large non-stick frying pan over high heat, then add zucchini, carrot, peas, and corn. Sauté for 2-3 minutes until zucchini is vibrant green. Let cool slightly before proceeding.
  • In a large bowl, vigorously whisk together the eggs, cottage cheese, and flour until fully incorporated. Season with your favorite blend of spices. Fold in the broccoli and zucchini mix until evenly distributed throughout the batter.
  • Transfer the mixture into the pan, ensuring an even distribution of the vegetables. Sprinkle with cheddar on top. Bake until golden and puffed, about 30-35 minutes. Allow to cool for 5-10 minutes before cutting into squares. Enjoy warm or cold.
