Protein-packed dark chocolate brownies with almond flour and toasted nuts for a rich, nutty twist.
Ingredients:
  • 1 cup mixed nuts
  • 1 cup brown sugar
  • 0.5 cup flaxseed oil
  • 0.25 cup unsalted butter, softened
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 cup almond flour
  • 0.75 cup unsweetened cocoa powder
  • 0.25 cup all-purpose flour
  • 2 ounces 70% dark chocolate, broken into small pieces
  • 2 teaspoons baking powder
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9-inch baking pan.
  • Lay out the assorted nuts evenly on a baking sheet.
  • Toast the nuts in the preheated oven until they become golden brown and fragrant, for about 10 to 12 minutes. Allow them to cool.
  • Combine brown sugar, flaxseed oil, and butter in a bowl until creamy. Gradually add eggs one at a time, whisking thoroughly. Stir in vanilla extract, then mix in toasted nuts, almond flour, cocoa powder, all-purpose flour, dark chocolate, and baking powder until well combined.
  • Spread the batter evenly in the baking pan, then generously sprinkle the remaining 1/3 cup of toasted nuts over the top.
  • Bake in the preheated oven for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
