Gingerbread brownies

Decadent gingerbread brownies, coated in rich chocolate and sprinkled with powdered sugar, ideal as a holiday treat or present.
Ingredients:
  • 250g unsalted butter, chopped
  • 300g dark chocolate, chopped
  • 4 eggs
  • 330g brown sugar
  • 200g plain flour
  • 2.00 gm baking powder
  • 1.25 gm ground cinnamon
  • 1.25 gm ground ginger
  • 1.25 gm ground nutmeg
  • 35g cocoa powder
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 170C and prepare a 20cm square cake pan by greasing and lining it.
  • In a heatproof bowl, gently melt the butter and 200g of chocolate over a pan of simmering water, ensuring the bowl does not touch the water. Stir until smooth, then let it cool slightly.
  • Beat in eggs one by one into the chocolate mixture until well combined. Mix in sugar, flour, baking powder, and spices. Gently fold in the cocoa. Pour batter into the pan and bake for 25 minutes until just set. Allow to cool in the pan, then unmold and cut into squares.
  • Melt the remaining 100g chocolate until smooth and let it cool slightly.
  • Sprinkle brownies with powdered sugar, followed by a luscious drizzle of melted chocolate.
