Caramel blondie with peanut butter fudge frosting recipe

Make festive Christmas blondies with white chocolate, peanut butter fudge frosting, and cute gingerbread men decorations.
Ingredients:
  • 200g butter, chopped
  • 180g white chocolate, chopped
  • 90.00 gm brown sugar
  • 128.75 gm milk
  • 8.80 gm vanilla extract
  • 250.00 ml plain flour
  • 75.00 gm self-raising flour
  • Icing sugar, to serve
  • Chocolate stars, to serve
  • Gingerbread men, to serve
  • Edible gold glitter, to decorate
  • White sprinkles, to decorate
  • 1 1/2 x 180g blocks white chocolate, chopped
  • 166.65 gm thickened cream
  • 85.80 gm crunchy peanut butter
Instructions:
  • Preheat your oven to 170C/150C fan-forced. Grease a 19cm square cake pan and line the base and sides with two layers of baking paper for easy removal.
  • In a large saucepan over medium heat, combine butter, chocolate, sugars, milk, and vanilla. Stir continuously for 5 minutes until everything is melted and smooth. Remove from heat and let it cool for 10 minutes.
  • Gently fold the flours into the decadent chocolate mixture, then add the eggs and whisk until fully combined. Pour the batter into the prepared pan and bake for 1 hour 15 minutes or until the top is lightly firm to the touch. Allow it to cool in the pan before serving.
  • Prepare the Putter Fudge Frosting: Combine chocolate, cream, and peanut butter in a microwave-safe bowl. Microwave on HIGH for 2 minutes, stirring every 30 seconds until melted. Let it sit for 10 minutes, then refrigerate for 20 minutes until thickened. Spread the frosting on the blondie, dust with icing sugar, and top with stars, gingerbread, glitter, and sprinkles before serving.
