Whiskey caramel topped Toffee Blondies for a bold twist on a classic treat.
Ingredients:
  • 1 cup granulated sugar
  • 1/3 cup water
  • 1/2 teaspoon lemon juice
  • 1/4 cup whiskey
  • 1/2 cup whipping cream
  • 1 box Betty Crocker™ Delights Super Moist™ French Vanilla Cake Mix
  • 1/3 cup butter, melted
  • 2 tablespoons water
  • 2 eggs
  • 1 cup toffee bits
Instructions:
  • In a 1-quart saucepan over medium-high heat, combine sugar, 1/3 cup water, and lemon juice. Heat until bubbles form and the mixture simmers. Resist stirring; gently swirl the pan occasionally for about 10 minutes until sugar caramelizes to a rich, dark amber color. Remove from heat.
  • Gently incorporate whiskey into the mixture, followed by whipping cream. Cook over medium-low heat for about 10 minutes, stirring continuously, until the mixture thickens. Remove from heat and set aside.
  • Preheat the oven to 350°F for a glass or shiny metal pan, or 325°F for a dark or nonstick metal pan. Generously spray the bottom of a 13x9-inch baking dish with cooking spray.
  • Combine cake mix, butter, 2 tablespoons of water, and eggs in a large bowl, then mix in toffee bits. Spread the mixture evenly in a baking dish and drizzle about one-third of the caramel sauce on top.
  • Bake until edges turn a beautiful golden brown. Allow to cool completely for about 1 hour before enjoying.
  • Drizzle another third of the caramel sauce over the bars, reserving the remaining third for later use. Allow the bars to stand for approximately 30 minutes, or until the caramel is fully set.
  • Cut bars into 6 rows by 2 rows, then slice each bar diagonally to create triangle-shaped pieces.
