Cinnamon-Toffee Blondies

Spicy cinnamon meets sweet toffee for a crave-worthy dessert.
Ingredients:
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup toffee bits
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 350°F and line a 9-inch square pan with parchment paper, allowing some to hang over the sides.
  • Combine the flour, baking powder, salt, and 1/2 teaspoon of ground cinnamon in a medium bowl.
  • In a mixing bowl, cream together 1 cup granulated sugar, brown sugar, and butter until pale and creamy. Add eggs one at a time, then vanilla. Slowly mix in the flour mixture until just combined, then fold in toffee bits.
  • Smooth the dough evenly in the pan and generously sprinkle the mixture of 1 tablespoon of granulated sugar and 1 teaspoon of cinnamon on top.
  • Bake for 30 to 35 minutes until edges are golden brown and the center is set. Allow to cool in the pan for 10 minutes, then lift the blondie out using the overhanging parchment as handles. Let it cool completely before cutting into 16 squares. Serve and enjoy!
