Try this foolproof Puerto Rican rice and black beans recipe packed with savory pork, recaito, and olives for a burst of delicious flavors.
Ingredients:
  • cooking spray
  • 1 pound pork roast, diced
  • 3 teaspoons minced garlic
  • 1 (15 ounce) can black beans, drained
  • 1 cup recaito (such as Goya®)
  • 1 (5 ounce) jar pitted green olives
  • 1 (1.41 ounce) package sazon seasoning with achiote
  • 3 cups long grain rice, rinsed
  • 2.75 cups water, or as needed
Instructions:
  • Coat a big stockpot with cooking spray and heat over medium-high heat. Brown the pork for about 7 minutes. Mix in garlic and cook until fragrant for about 1 minute. Add beans, recaito, olives, and sazón seasoning. Lower the heat and simmer for approximately 10 minutes.
  • 1. Coat the rice in the pot by stirring it. 2. Pour water into the pot and bring it to a boil. 3. Simmer while covered for 20 minutes. 4. Stir the rice at the top, avoiding the slight crust at the bottom. 5. If the rice has absorbed most of the liquid, remove from the stove. If not, cook for up to 10 more minutes.
