Pumpkin and chia muffins

Make delicious cheesy pumpkin chia muffins with Flora Original for a perfect snack or soup accompaniment.
Ingredients:
  • 80g spread
  • 1 spring onion, thinly sliced
  • 250g butternut pumpkin, peeled, seeded, coarsely grated
  • 375g self-raising flour
  • 1.20 gm salt
  • 120g cheddar cheese
  • 40.00 ml chia seeds
  • 1 Free Range Egg, lightly whisked
  • 310ml buttermilk
  • Chia seeds, extra, to sprinkle
  • Flora Original Spread , extra, to serve
Instructions:
  • 1. Preheat your oven to 190°C. 2. Grease a 12-hole, 1/3-cup (80ml) muffin pan. 3. In a medium frying pan over medium heat, melt 1 tablespoon of Flora Original. Add in spring onion and garlic, cook and stir for about 3 minutes until the spring onion softens. 4. Stir in the pumpkin and cook for an additional 5 minutes until the pumpkin softens. Let it cool before moving on.
  • In a saucepan over medium heat, melt the rest of the Flora Original. Mix flour and salt in a bowl. Add cheddar and chia seeds, then stir. Whisk egg, buttermilk, and melted Flora Original in another bowl. Season to taste. Pour the egg mixture into the flour mixture. Gently fold in pumpkin mixture using a large metal spoon until just combined.
  • Transfer the mixture into the pan. Sprinkle on additional chia seeds. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack. Enjoy with an extra dollop of Flora Original.
