Rich bread pudding flavored with pumpkin puree, cinnamon, and vanilla extract.
Ingredients:
  • 6 cups cubed French bread
  • 1 cup heavy cream
  • 1 cup vanilla soy milk
  • 3 eggs
  • 1 (16 ounce) can pumpkin puree
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.5 cup raisins
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect bake.
  • Combine the bread cubes with the luscious cream and soy milk in a large bowl, ensuring every cube soaks up the decadent mixture; set aside.
  • In a separate bowl, whisk together the eggs, pumpkin puree, brown sugar, cinnamon, vanilla, and salt until smooth. Pour this flavorful mixture over the bread cubes along with the raisins, and gently mix everything together. Refrigerate for 30 to 60 minutes before enjoying.
  • Portion the mixture evenly into 8 6-ounce ramekins. Bake until the pudding sets and the top is golden brown, approximately 1 hour. Let it cool for 30 minutes before serving.
