Pumpkin pie bread pudding: a divine dessert fusion.
Ingredients:
  • 1 loaf French bread, cut into cubes
  • 0.5 cup raisins, or more to taste
  • 1 teaspoon maple-flavored extract
  • 1 teaspoon rum-flavored extract
  • 0.25 cup water, or as needed
  • 3 cups milk
  • 1 (15 ounce) can pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk (such as Eagle Brand®)
  • 3 large eggs
  • 0.33333334326744 cup brown sugar
  • 0.33333334326744 cup butter, melted
  • 2 tablespoons molasses
  • 2 teaspoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground allspice
  • 0.5 teaspoon ground ginger
Instructions:
  • Prepare the baking dish by greasing a 9x13-inch pan.
  • Evenly layer the bread cubes in the baking dish.
  • Combine plump raisins with maple and rum extracts in a bowl, then add just enough water to nearly cover the raisins. Microwave the mixture until the raisins are plump, approximately 1 1/2 minutes. Let it cool slightly before using.
  • In a large bowl, whisk together milk, pumpkin puree, sweetened condensed milk, eggs, raisins, brown sugar, butter, molasses, vanilla extract, pumpkin pie spice, cinnamon, allspice, and ginger until smooth. Pour mixture over bread and let it sit for about 1 hour to absorb the liquid.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Bake in the oven until a knife inserted in the center comes out clean, about 45-50 minutes.
