Spiced moist pumpkin sheet cake, ideal for potlucks.
Ingredients:
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoon salt
  • 2 cups white sugar
  • 1.25 cups vegetable oil
  • 2 cups canned pumpkin
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F (175°C) while preparing a 12x18-inch sheet pan by greasing and flouring it.
  • In a large bowl, combine the flour, baking powder, baking soda, cinnamon, and salt by sifting them together; then set aside.
  • Using an electric mixer, blend the sugar and oil together in a large bowl until smooth.
  • Mix together the pumpkin and vanilla until smooth, then gradually add the eggs one at a time, beating well after each addition.
  • Slowly incorporate the flour mixture until fully mixed in.
  • Add chopped walnuts to the batter, then evenly spread it into the prepared sheet pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 30 minutes. Let it cool.
