Delicious pumpkin cake with apple slices, cinnamon, and sugar topping.
Ingredients:
  • 1 cup sugar
  • 2 cups flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cardamom
  • 2 teaspoons lemon zest
  • 2 teaspoons ground ginger
  • 2 cups pumpkin puree
  • 0.75 cup vegetable oil
  • 3 egg whites, beaten
  • 1 apple - peeled, cored, and sliced
  • 2 teaspoons white sugar
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat your oven to a toasty 300 degrees F (150 degrees C) and lightly grease a 9-inch round cake pan.
  • In a large bowl, whisk together flour, sugar, baking powder, cinnamon, cardamom, lemon zest, and ginger. Add egg yolk, pumpkin puree, and oil; mix until smooth. Carefully fold in egg whites. Pour batter into prepared pan. Top with apple slices and sprinkle with sugar and cinnamon.
  • Bake until a toothpick inserted in the center comes out clean, about 40 minutes. Let it cool before serving.
