Ingredients:
  • 2 large Granny Smith apples - peeled, cored, and sliced into 1/8-inch thick slices
  • 3 tablespoons firmly packed brown sugar
  • 2 teaspoons lemon juice
  • 0.5 teaspoon ground cinnamon
  • 1 cup rolled oats
  • 0.5 cup all-purpose flour
  • 0.5 cup firmly packed brown sugar
  • 6 tablespoons unsalted butter, softened
  • 3 cups all-purpose flour
  • 2.5 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1.5 cups white sugar
  • 0.75 cup unsalted butter, softened
  • 4 large eggs, at room temperature
  • 1 (15 ounce) can pumpkin puree
  • 0.5 cup unsweetened applesauce
  • 0.5 cup sour cream, at room temperature
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a high-sided 9x13-inch pan.
  • Combine apple slices with brown sugar, lemon juice, and cinnamon in a bowl and mix well until coated.
  • For the topping, combine oats, flour, brown sugar, cinnamon, and salt until mixed. Then, incorporate butter until the mixture has a coarse crumb texture.
  • Combine flour, pumpkin pie spice, baking powder, baking soda, and salt in a bowl, mixing until fully incorporated.
  • In a large bowl, use an electric mixer to cream together white sugar and butter until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in pumpkin puree, applesauce, sour cream, and vanilla until fully incorporated. Gradually add half of the flour mixture, mixing just until combined. Repeat with the remaining flour mixture, being careful not to overmix.
  • Spread the cake batter in the prepared pan evenly. Arrange the apple slices over the batter and sprinkle with topping. Set the pan on a baking tray to prevent any spills.
  • Bake in the preheated oven for 70-80 minutes, or until the center of the cake springs back when lightly touched. Let the cake cool completely before slicing.
