Whip up delicious pumpkin cookies using canned pumpkin, cake mix, raisins, and ready-made frosting.
Ingredients:
  • 1 (15.25 ounce) package yellow cake mix
  • 2 teaspoons pumpkin pie spice
  • 0.25 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 0.25 cup all-purpose flour, or more as needed
  • 1 cup raisins
  • 1 (16 ounce) container cream cheese frosting
Instructions:
  • Preheat the oven to 375°F (190°C) and prepare 2 baking sheets with parchment paper.
  • In a large bowl, mix cake mix, pumpkin puree, melted butter, and pumpkin pie spice with an electric mixer until smooth. Gradually add 1/4 cup flour and continue mixing until fully combined. Add additional flour as needed until dough is no longer sticky. Stir in raisins.
  • Spoon out dough onto baking sheets, keeping them 2 inches apart.
  • Bake in the preheated oven until edges are golden, for about 10-12 minutes. Allow to cool on the baking sheet for 1 minute, then transfer to a wire rack to cool for an additional 8-10 minutes.
  • Finish off the cookies with a luscious cream cheese frosting and let them sit for at least 8 hours, or preferably overnight. The cookies may seem slightly firm right after baking, but they will become wonderfully soft as they rest.
