Moist pumpkin coconut bread, perfect for fall holidays.
Ingredients:
  • 2 cups white sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 (15 ounce) can pumpkin puree
  • 3.5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 0.5 teaspoon ground cloves
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground nutmeg
  • 0.66670000553131 cup water
  • 1 cup flaked coconut
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat oven to 350°F (175°C). Grease and flour two 9x5 inch loaf pans.
  • Combine the sugars, oil, and eggs before mixing in the pumpkin. Blend in the flour, salt, baking soda, and spices, followed by the water. Gently mix until just combined, then fold in the coconut and nuts. Transfer the batter into the prepared pans.
  • Bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
