South Indian pumpkin & coconut soup

Cozy up with a rustic winter soup, perfect for chilly nights. Pair with crusty bread and rich butter for the ultimate comfort meal.
Ingredients:
  • 1 x 170g pkt South Indian Curry with Roasted Spices Flavour Base
  • 1 kg butternut pumpkin, peeled, deseeded, coarsely chopped
  • 750ml (3 cups) water
  • 185ml (3/4 cup) coconut cream
  • 20.20 gm coconut cream, extra, to serve
  • 20.00 ml finely chopped fresh chives
Instructions:
  • In a large saucepan over high heat, mix the flavor base, pumpkin, and water. Bring to a boil. Reduce heat to medium-low and simmer without a lid, stirring occasionally, for 15-20 minutes until the pumpkin softens. Take off the heat and let it cool for 5 minutes.
  • Blend the pumpkin mixture in a blender until smooth. Transfer to a saucepan, add coconut cream, and cook over medium heat, stirring, for 5 minutes until heated through.
  • Serve the soup in bowls, drizzle with extra coconut cream, sprinkle with chives, and serve right away.
