Microwave-softened bitter gourd sautéed in aromatic South Indian spices creates a flavorful and effortless side dish.
Ingredients:
  • 2 bitter gourds, seeded and cut into 1/2-inch rings
  • 2 teaspoons vegetable oil, divided
  • 0.5 teaspoon salt
  • 2 pinches asafoetida powder
  • 0.5 teaspoon gram flour (besan)
  • 0.5 teaspoon ground red chile pepper
  • 0.25 teaspoon ground coriander
  • 0.5 teaspoon jaggery
Instructions:
  • In a microwave-safe bowl, mix bitter gourd rings with 1 teaspoon of oil and salt until well coated. Microwave for about 4 minutes, stirring halfway through, until tender.
  • In a saucepan over low heat, heat the remaining oil. Add the gourds and asafoetida powder, cook and stir until slightly browned for about 10 minutes. Stir in besan, ground red chile, and coriander, cook until flavors meld for about 3 minutes. Finally, mix in jaggery until well combined.
