Spiced South Indian dosas - a flavorful twist on a traditional crepe-like pancake.
Ingredients:
  • 1 cup brown rice flour
  • 0.5 cup whole wheat flour
  • 1.5 cups water
  • 1 red onion, finely chopped
  • 1 clove garlic, minced
  • 0.25 cup fresh cilantro, chopped
  • 0.25 teaspoon white sugar
  • 0.5 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 2 teaspoons whole mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1 pinch cayenne pepper
  • 3 tablespoons rice vinegar
  • 1 tablespoon vegetable oil
Instructions:
  • In a mixing bowl, combine brown rice flour and whole wheat flour. Mix in water to make a thin batter. Add onion, garlic, cilantro, sugar, turmeric, cumin, mustard seeds, cumin seeds, coriander, ginger, cayenne pepper, and rice vinegar. Stir until well combined. Cover and refrigerate for at least 1/2 hour, or overnight.
  • Heat oil in a skillet over medium heat. Pour 1/4 cup of batter into the skillet, spreading it thinly. Cook for 1 minute on each side. Remove and repeat with the rest of the batter.
