Onion Tamarind Chutney

Authentic South Indian chutney, perfect with idlis and dosas.
Ingredients:
  • 2 teaspoons oil, divided
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 5 small fresh red chile peppers
  • 2 medium onion, chopped
  • 8 cloves garlic, minced
  • 2 medium tomatoes, chopped
  • 1 tablespoon tamarind paste
  • 1 pinch ground turmeric
  • 1 tablespoon water, or more as needed
  • 0.5 teaspoon mustard seed
  • salt to taste
  • 6 curry leaves
Instructions:
  • In a skillet, warm 1 teaspoon of oil over medium heat. Add cumin seeds and coriander seeds, followed by red chile peppers. Cook for 1 minute. Then, add onion and saute until tender for 3 to 5 minutes. Stir in garlic and cook until fragrant for about 1 minute. Finally, add tomato and cook until softened for about 3 minutes.
  • Combine the tangy tamarind paste and vibrant turmeric powder, making sure they're well incorporated. Cook the mixture for 1 minute, then take it off the heat and allow it to cool completely.
  • Pour the skillet contents into a blender, season with salt, and blend until smooth, adding water as necessary.
  • In a skillet, heat the remaining 1 teaspoon of oil, then add mustard seeds and curry leaves. Cook until the mixture splutters, then pour the tempering over the chutney and mix well.
