Seasonal twist on Mexican sweet bread with pumpkin puree, ideal for pumpkin season breakfast or brunch.
Ingredients:
  • 2.25 cups all-purpose flour
  • 0.5 cup pumpkin puree
  • 0.25 cup warm milk
  • 1 large egg yolk
  • 2 tablespoons butter, melted
  • 1 (.25 ounce) package active dry yeast
  • 1 teaspoon kosher salt
  • 0.125 teaspoon vanilla extract
  • 0.5 cup powdered sugar
  • 0.5 cup all-purpose flour
  • 1 pinch kosher salt
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon ground allspice
  • 1 pinch ground nutmeg
  • 0.25 cup butter, at room temperature
  • orange food coloring
Instructions:
  • In the bowl of a stand mixer with the dough hook attachment, embrace a delightful union of flour, pumpkin puree, warm milk, egg yolk, melted butter, sugar, active dry yeast, salt, and vanilla extract. Let them dance harmoniously until they form a smooth, slightly elastic ball, or knead by hand for about 5 minutes.
  • Transfer the dough to a gently greased mixing bowl, cover it, and allow it to rise in a warm place until it doubles in size, approximately 2 hours.
  • While the dough is resting, blend powdered sugar, flour, butter, cinnamon, allspice, nutmeg, salt, and vanilla extract in a bowl to create the topping. Use your hands or a spatula to combine until a cohesive dough is formed. Add orange food coloring if desired.
  • Divide the topping dough into 6 equal portions and shape them into balls. Place them on a parchment-lined baking sheet. Cover each ball with plastic wrap and flatten them into circles using the bottom of a glass or measuring cup. Use a knife to score a pumpkin design on the topping. Refrigerate to firm up.
  • Once the dough has risen, gently transfer it to a work surface and deflate it by pressing down. Divide it into 6 equal parts and shape each into a smooth ball. Place the balls on a baking sheet lined with a Silpat and lightly flatten them. Add the topping on each ball. Let them proof until they double in size, approximately 45 minutes.
  • Preheat your oven to 375°F (190°C) for the perfect bake.
  • Bake in a preheated oven until puffed up and golden, approximately 20 minutes. Let cool to room temperature for about 20 minutes.
