Autumn spiced custard with a crisp caramel sugar topping.
Ingredients:
  • 6 LAND O LAKES® All-Natural Farm-Fresh Eggs
  • 1/3 cup granulated sugar
  • 2 tablespoons packed light brown sugar
  • 1/4 cup canned pumpkin (not pumpkin pie mix)
  • 1 teaspoon vanilla
  • 1 1/2 cups heavy whipping cream
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of salt
  • 2 to 4 tablespoons coarse sugar or turbinado sugar (raw) sugar
Instructions:
  • Preheat your oven to 300°F. Arrange 4 (8-oz) ceramic ramekins in a 13x9-inch (3-quart) glass baking dish. Begin boiling water in a pot (or use a tea kettle). Separate eggs, keeping yolks and refrigerating whites for later use.
  • In a large bowl, whisk together egg yolks, granulated sugar, and brown sugar until evenly colored. Stir in pumpkin and vanilla until well blended. Set aside.
  • In a small saucepan, gently warm whipping cream with cinnamon, pumpkin pie spice, and salt over medium heat, stirring often until just simmering. Gradually drizzle the cream into the egg yolk mixture while whisking continuously until fully combined. Strain through a fine-mesh sieve into a bowl.
  • Evenly distribute the strained mixture into the ramekins. Place the baking dish in the center of the oven rack. Carefully pour boiling water into the dish, ensuring it reaches halfway up the sides of the ramekins without splashing.
  • Bake in the oven for 25 to 35 minutes until the sides are set but the centers are still slightly jiggly. Use tongs or a pot holder to transfer the ramekins to a cooling rack. Let them cool to room temperature for about 2 hours, then cover with plastic wrap and refrigerate for at least 2 hours, but not more than 2 days.
  • Uncover ramekins and pat any condensation on custards with a paper towel. Before serving, sprinkle each custard evenly with 1 1/2 teaspoons to 1 tablespoon of coarse sugar. Use a kitchen torch held 3 to 4 inches away, move the flame continuously in a circular motion over the sugar for about 2 minutes until it melts and turns light golden brown. Alternatively, caramelize under the broiler. Serve promptly.
