Reduced-Sugar Pumpkin Creme Brulee

Indulgent pumpkin spice creme brulee with a sweet raw sugar and stevia topping.
Ingredients:
  • 3 egg yolks
  • 0.25 cup Sugar In The Raw®
  • 0.25 cup Stevia In The Raw®
  • 1 cup heavy cream
  • 1 cup unsweetened pumpkin puree
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons Sugar In The Raw®, or as needed
Instructions:
  • Heat your oven to 325°F.
  • Combine yolks, sugar, and stevia in a medium bowl, whisking until well mixed.
  • Simmer cream in a saucepan, then whisk into yolk mixture along with pumpkin, vanilla, and spices.
  • Pour mixture through a fine-mesh sieve into a large measuring cup.
  • Transfer the mixture evenly into six 6-ounce ramekins placed in a roasting pan or deep baking dish. Create a water bath by adding scalding hot water into the pan until it reaches halfway up the sides of the ramekins.
  • Bake for about 30 minutes until custards are firm but slightly jiggly in the center. Allow them to cool on a rack, then refrigerate covered with plastic wrap for at least 2 hours or up to 24 hours before serving.
  • Sprinkle custards with sugar and caramelize using a propane torch or broiler before serving.
