Ingredients:
  • 1.5 cups all-purpose flour
  • 1 tablespoon Sugar In The Raw®
  • 1 tablespoon Stevia In The Raw®
  • 0.25 teaspoon fine sea salt
  • 10 tablespoons cold unsalted butter, cut into small cubes
  • Ice water
  • 3 large Granny Smith apples, cored and sliced 1/2-inch thick
  • 1.5 cups raw cranberries
  • 0.33333334326744 cup Sugar In The Raw®
  • 0.33333334326744 cup Stevia In The Raw®
  • 3 tablespoons all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon sea salt
  • 0.33333334326744 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 0.33333334326744 cup old-fashioned rolled oats
  • 3 tablespoons Sugar In The Raw®
  • 2 tablespoons Stevia In The Raw®
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 5 tablespoons unsalted butter, softened
  • 1 large egg, beaten
Instructions:
  • In a large bowl, mix flour, sugar, stevia, and salt. Incorporate butter by rubbing it with your fingers until mixture resembles a coarse texture with pieces ranging from pea-sized to nickel-sized. Gradually add ice water, stirring, until dough holds together when pressed - not sticky or crumbly.
  • Place the dough on a clean countertop, gently knead to combine, shape into a disk, and tightly wrap in plastic wrap. Chill in the refrigerator for at least 2 hours or up to 2 days.
  • Roll out the dough on a floured surface into a 12-inch round. Gently place it in a 9-inch pie dish and press it into the bottom. Trim any excess dough, leaving a 1-inch overhang. Fold the overhang back underneath itself to create a thick rim on the edge of the pie dish.
  • To create a beautifully crimped crust, gently press one side with your thumb and the other side with your thumb and index finger. Chill the crust while you prepare the filling and streusel.
  • Heat your oven to 375°F.
  • Combine apples, cranberries, sugar, stevia, flour, cinnamon, and salt in a large bowl. Transfer mixture into the pie crust and refrigerate.
  • Combine flour, oats, sugar, stevia, cinnamon, nutmeg, cloves, and salt in a medium bowl. Rub in butter until mixture is crumbly.
  • Spread a generous layer of streusel over the pie, ensuring it covers the entire surface. Transfer the pie dish onto a baking sheet and delicately brush the rim of the crust with beaten egg. Bake for approximately 1 hour, or until the crust is golden brown and the filling is bubbling.
  • Allow the pie to cool down fully at room temperature before enjoying.
