Try this irresistible layered pumpkin dessert - a perfect twist on pumpkin pie! Featuring a simple graham cracker crust, luscious cream cheese and pumpkin layers, topped with whipped cream. Caution: contains raw eggs; not recommended for pregnant women, young children, elderly or those with weakened immune systems.
Ingredients:
  • 0.33000001311302 cup white sugar
  • 24 graham crackers, crushed
  • 2 eggs
  • 1 (8 ounce) package cream cheese, softened
  • 1 envelope (1 tablespoon) unflavored gelatin
  • 0.25 cup water
  • 1 (15 ounce) can pumpkin
  • 3 eggs, separated
  • 0.5 pint whipped cream
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and gently grease a 9x13 inch baking dish.
  • In a medium saucepan over medium heat, melt butter. Mix in the sugar until well combined, then add graham cracker crumbs. Press the mixture into a baking dish.
  • Combine eggs, sugar, and cream cheese in a medium mixing bowl, then pour over crust.
  • Bake for 20 minutes in the preheated oven, then let it cool.
  • In a small bowl, mix the gelatin with water until dissolved.
  • In a medium saucepan over medium heat, combine pumpkin, eggs, milk, sugar, salt, and cinnamon. Keep the egg whites aside. Cook while stirring continuously until thickened, around 4 minutes. Remove from heat, stir in the gelatin, and let it cool for about 20 minutes.
  • Whisk 3 egg whites until stiff peaks form. Fold them gently into the cooled pumpkin mixture and pour this over the cream cheese layer. Finish by topping with whipped cream. Chill in the refrigerator for about 2 hours before serving.
