Indulgent pumpkin cream cheese brownies with warm cinnamon spices - a definite crowd-pleaser!
Ingredients:
  • 3 oz (from 8-oz package) cream cheese, softened
  • 1/4 cup sugar
  • 1/4 cup canned pumpkin (not pumpkin pie mix)
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 egg, separated, yolk reserved for brownie batter
  • 1 box (16 oz) Betty Crocker™ Delights Supreme Original Brownie Mix
  • Water, vegetable oil and egg called for on brownie mix box
  • Reserved egg yolk
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pan). Grease the bottom of a 9-inch square pan with shortening or cooking spray. In a small bowl, stir together cream cheese and sugar until smooth. Mix in pumpkin, flour, cinnamon, nutmeg, and egg white until fully combined. Set the mixture aside.
  • Prepare the brownie batter as instructed on the box, adding the reserved egg yolk. Set aside 1/2 cup of the brownie batter. Spread the remaining batter in the pan. Drop filling by tablespoonfuls evenly onto the batter in a 3x3 grid. Place about 1 tablespoon of the reserved brownie batter in the center of each dollop of filling. Use a knife to create a swirl design by dragging it through the mixture in four straight lines horizontally and then vertically.
  • Bake for 30 to 35 minutes, or until a toothpick inserted 2 inches from the side of the pan comes out nearly clean. Let it cool on a rack for 30 minutes, then refrigerate for at least 1 hour until cold. Cut into 4 rows by 4 rows and store covered in the refrigerator.
