Delightful pumpkin flan baked in a pumpkin-shaped tart pan, topped with chocolate ganache to resemble a jack-o’-lantern. Perfect for a Halloween treat!
Ingredients:
  • 1 (8 ounce) container silken tofu
  • 0.5 cup pumpkin puree
  • 0.25 cup applesauce
  • 0.25 cup cornstarch
  • 3 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 drop orange food coloring
  • 0.25 cup 70% to 80% dark chocolate, chopped
  • 2 tablespoons heavy whipping cream
  • 1 teaspoon honey
  • 2 teaspoons butter
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and nestle a tart pan snugly on a baking sheet.
  • In a bowl, blend silken tofu, pumpkin puree, applesauce, cornstarch, eggs, maple syrup, vanilla extract, pumpkin pie spice, and food coloring until smooth using a stick blender. Pour the batter into the tart pan, filling halfway.
  • Bake the flan in the preheated oven for about 25 minutes until set. Cool completely before flipping onto a serving plate.
  • Take the chocolate and put it into a metal bowl. In a small saucepan, heat the cream, honey, and butter until almost boiling. Pour the hot mixture over the chocolate. Let it sit for 1 minute, then stir until the chocolate is completely melted. Put the chocolate ganache into a piping bag with a small tip and use it to decorate the pumpkin flan. Chill in the refrigerator until you're ready to serve.
