Pumpkin green curry with coconut rice recipe

A delicious pumpkin green curry with coconut, ideal for Meat-free Mondays or quick vegetarian dinners.
Ingredients:
  • 75g curry paste
  • 400ml can coconut cream
  • 800g butternut pumpkin, seeded, peeled, cut into 3cm pieces
  • 2 bunches baby broccoli, ends trimmed
  • 250g pkt microwavable coconut rice
Instructions:
  • In a large saucepan over medium heat, sauté the curry paste for 1 minute until fragrant. Stir in the coconut cream and pumpkin. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 15 minutes until the pumpkin is tender.
  • Toss in the baby broccoli and sauté for just 2 minutes until it turns vibrant green and becomes tender.
  • Cook the coconut rice according to the instructions on the packet.
  • Present the flavorful curry alongside the aromatic coconut rice.
