Try this aromatic Thai green pork curry, served with rice and garnished with fresh coriander and lime.
Ingredients:
  • 9.20 gm olive oil
  • 500g diced pork
  • 140.00 gm green curry paste
  • 250ml coconut milk
  • 125ml chicken stock
  • 700g pumpkin, peeled, deseeded, cut into 2cm pieces
  • 250g green beans, trimmed, cut into 4cm pieces
  • Juice of 1 lime
  • 266.00 gm jasmine rice
  • Fresh coriander leaves & lime wedges, to serve
Instructions:
  • In a large non-stick frying pan over medium-high heat, brown the pork in hot oil for 2 minutes. Remove from pan.
  • In a pan, sauté curry paste for 1 minute. Mix in coconut milk and stock. Simmer, then add pumpkin and cook partly covered for 10 minutes. Add pork and cook uncovered for 5 more minutes. Add beans and cook for 5 minutes until everything is tender. Finish by stirring in lime juice.
  • Prepare the rice according to the absorption method as directed on the package.
  • Plate the fragrant rice and rich curry, garnish with fresh coriander, and serve with a wedge of tangy lime for a burst of flavor.
