Whip up delicious Pumpkin Muffins for a quick and satisfying taste of autumn.
Ingredients:
  • 2 cups (240 g) all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 (15-ounce) can pumpkin purée
  • 1 1/4 cups (270g) packed light brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • Special equipment
  • Standard muffin pan
  • Muffin liners
Instructions:
  • Preheat your oven to 375°F and line a standard muffin pan with liners or grease with butter.
  • Combine the dry ingredients: Whisk flour, pumpkin pie spice, baking powder, baking soda, and salt in a large mixing bowl.
  • Combine the pumpkin purée, brown sugar, eggs, and vegetable oil in a medium mixing bowl, whisking until smooth and well mixed.
  • Combine the pumpkin mixture with the flour mixture using a large spoon or rubber spatula until just combined and no streaks of flour are visible. Avoid overmixing; a few lumps in the batter are acceptable.
  • Evenly distribute the muffin batter among the cups, filling each nearly to the top.
  • Bake the muffins until a toothpick inserted in the center comes out clean, about 20 minutes.
  • Let the muffins cool: Cool them in the pan for 5 minutes, then transfer to a wire rack to cool for at least 10 more minutes. Serve warm or at room temperature.
