Delicious pumpkin cookies loaded with pecans and white chocolate chips.
Ingredients:
  • 2.25 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon pumpkin pie spice
  • 1 cup unsalted butter
  • 1.5 cups dark brown sugar
  • 1 cup solid pack pumpkin puree
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 10 ounces white chocolate, chopped
  • 0.5 cup pecan halves
Instructions:
  • Preheat your oven to 300 degrees F (150 degrees C) and grease the cookie sheets.
  • Combine butter and brown sugar in a large bowl, cream until smooth. Add eggs and vanilla, mix well. Stir in pumpkin puree until fully blended. Combine flour, baking soda, and pumpkin pie spice, add to mixture. Fold in white chocolate and pecans. Spoon onto cookie sheets. Make sure cookies are 2 inches apart.
  • Bake in the preheated oven for 20 to 22 minutes until the bottoms are lightly browned. Let them cool for 5 minutes on the baking sheets before transferring to wire racks to cool.
