Cozy up with a delicious bowl of pumpkin pie oatmeal infused with pumpkin puree, cinnamon, and ginger for a perfect fall breakfast.
Ingredients:
  • 3 cups boiling water
  • 1 cup steel-cut oats
  • 1 cup pumpkin puree
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon ground ginger
  • 0.75 cup milk
  • 5 tablespoons milk
  • 1 tablespoon brown sugar
Instructions:
  • In a saucepan, simmer water until boiling, then mix in oats, pumpkin puree, vanilla extract, and a pinch each of cinnamon and ginger. Reduce heat and let simmer undisturbed for around 25 minutes until oatmeal thickens.
  • Mix in 3/4 cup milk to the oatmeal and cook for an additional 10 minutes. Serve in bowls and garnish with 5 tablespoons milk, brown sugar, and 1/4 teaspoon cinnamon.
