Delicious pumpkin custard bites with oatmeal crust and crispy nut topping.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup rolled oats
  • 0.5 cup packed brown sugar
  • 0.5 cup butter
  • 2 cups pumpkin puree
  • 1 (12 fluid ounce) can evaporated milk
  • 2 egg whites
  • 0.75 cup white sugar
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 0.5 cup chopped walnuts
  • 2 tablespoons butter
  • 1 cup whipped cream
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x13 inch pan with non-stick spray or grease.
  • Combine the flour, oatmeal, brown sugar, and butter or margarine until well mixed. Press the mixture into a pan and bake for 20 minutes or until golden brown.
  • Use a large deep metal bowl to beat the egg whites until soft peaks form.
  • Combine pumpkin, evaporated milk, egg whites, sugar, salt, cinnamon, ginger, and clove until smooth. Pour the custard mixture into the pre-baked crust and bake for 30 minutes or until set.
  • Combine the chopped nuts, brown sugar, and butter to create a delicious topping. Sprinkle it over the custard and bake for an additional 15 minutes. Once done, let it cool, cut into squares, and add a dollop of whipped cream for extra indulgence, if desired.
