Delicious pumpkin dessert with all the flavors of pumpkin pie, perfect for feeding a crowd.
Ingredients:
  • 1 1/2 cups Original Bisquick™ mix
  • 1/2 cup butter or margarine, softened
  • 1/2 cup chopped pecans
  • 1 cup sugar
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 1 can (12 oz) evaporated milk
  • 4 teaspoons pumpkin pie spice
  • 3 eggs
  • 1 cup Original Bisquick™ mix
  • 1/2 cup packed brown sugar
  • 1/4 cup butter or margarine
  • 3/4 cup chopped pecans
Instructions:
  • Preheat the oven to 350F. Grease a 13x9-inch pan with cooking spray. Combine 1 1/2 cups Bisquick and 1/2 cup pecans in a medium bowl. Incorporate 1/2 cup butter using a pastry blender or fork until the mixture is crumbly. Press the mixture into the bottom of the pan using floured fingers. Bake for 10 minutes.
  • In a large bowl, whisk together the filling ingredients until smooth. Set aside. In a medium bowl, mix together 1 cup Bisquick mix and 1/2 cup brown sugar. Using a pastry blender or fork, incorporate 1/4 cup butter until the mixture becomes crumbly. Gently fold in the pecans.
  • Pour the luscious filling over the warm, golden partially baked base. Then, generously sprinkle the delightful topping over the filling.
  • Bake for 50 to 55 minutes until a toothpick inserted in the center comes out clean. Let cool for 30 minutes before cutting into squares and serving with whipped cream, if desired. Refrigerate for storage.
