Pumpkin pie flavor packed into irresistible pumpkin oatmeal cookies loved by all ages.
Ingredients:
  • 1 (15 ounce) can pumpkin puree
  • 1 cup honey
  • 0.25 cup water
  • 1 teaspoon vanilla extract
  • 3 cups oats
  • 1.5 cups all-purpose flour
  • 0.25 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground nutmeg
  • 0.125 teaspoon ground cloves
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease the baking sheets.
  • In a large bowl, combine pumpkin, honey, shortening, water, egg, and vanilla extract, and beat until creamy. In another bowl, whisk together oats, flour, brown sugar, cinnamon, ginger, baking soda, baking powder, salt, nutmeg, and cloves. Add the oat mixture to the pumpkin mixture and stir until well-blended. Drop rounded teaspoonfuls of dough onto prepared baking sheets.
  • Bake in the preheated oven for 12 to 15 minutes until golden and set.
