Colorful pumpkin puree enhances chocolate chip oatmeal cookies.
Ingredients:
  • 1.5 cups butter, softened
  • 2 cups packed brown sugar
  • 1 cup white sugar
  • 1 (15 ounce) can pumpkin puree
  • 1 egg
  • 4 cups all-purpose flour
  • 2 cups quick-cooking oats
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups miniature chocolate chips
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • In a bowl, cream together butter, brown sugar, and white sugar until smooth. Add pumpkin, egg, and vanilla extract; beat until mixture is creamy and well combined.
  • Combine flour, oats, cinnamon, baking soda, baking powder, and salt in a separate bowl, then mix into creamed butter until well combined. Gently fold in chocolate chips. Drop tablespoon-sized portions of batter onto a baking sheet to make cookies.
  • Bake in the oven until the cookie edges turn golden brown, about 10 to 12 minutes.
