Delicious pumpkin oatmeal cookies with coconut sugar, raisins, and walnuts appeal to all ages.
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup old-fashioned oats
  • 0.5 cup wheat germ
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 1 cup butter, softened
  • 1 cup coconut sugar
  • 1 cup packed brown sugar
  • 1 cup pumpkin puree
  • 0.75 cup chopped walnuts
  • 0.75 cup raisins
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare baking sheets with parchment paper.
  • In a bowl, mix all-purpose flour, whole wheat flour, oats, wheat germ, baking soda, cinnamon, allspice, cloves, and salt. In another bowl, cream butter, coconut sugar, and brown sugar until light and fluffy using an electric mixer. Add pumpkin puree, egg, and vanilla extract and mix thoroughly.
  • Mix the flour mixture into the pumpkin mixture until the dough is well combined; then gently add in the walnuts and raisins. Spoon about 1 tablespoon of dough per cookie onto the prepared baking sheets.
  • Bake the cookies in the preheated oven for about 15 minutes until they are lightly browned on the edges. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
