Decadent pumpkin cake roll with luscious cream cheese filling.
Ingredients:
  • 3 eggs
  • 1 cup white sugar
  • 0.66000002622604 cup pumpkin
  • 1 teaspoon lemon juice
  • 0.75 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 cup chopped walnuts
  • 1 (8 ounce) package cream cheese
  • 1.5 cups confectioners' sugar
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350F (175C) and lightly grease a 10x15 inch jelly roll pan.
  • Begin by whisking the eggs in a large bowl until they are light and fluffy, then mix in the sugar until it becomes fluffy once again. Add the pumpkin and lemon juice, stirring until well combined. In a separate bowl, mix together the flour, baking powder, salt, cinnamon, and nutmeg. Gently fold the dry ingredients into the pumpkin mixture. Pour the batter into the prepared pan and top it with a sprinkling of nuts.
  • Preheat the oven and bake the cake for 15 minutes. Sprinkle a kitchen towel with confectioner's sugar, then turn the hot cake onto the towel. Gently roll the cake in the towel, with the long ends together, and let it cool completely.
  • Prepare the filling by combining cream cheese, butter, and confectioners' sugar in a medium bowl until smooth. Mix in vanilla for added flavor.
  • Gently unfurl the cooled cake, discarding the towel. Spread the filling evenly over the cake, then roll it back up. Chill in the fridge until it's time to enjoy.
